Of all the varieties, it is the most used, the easiest to grow, and as soon as farmers had a sign of market interest, they began to grow large quantities.
According to the president of B&P, the risk now is that all this spelt will be used for biomass.
Keeping it stored implies costs and there is no possibility of disposing of it as before.
To regulate the market, databases would be needed to make the flows of goods transparent. Not that they are lacking, however they are not integrated with each other and are not even updated in real time.
The interview also discussed the cereal market in general and the causes of the clear reversal of the trend that characterizes today's economic panorama.
If before, in fact, Italy was the largest exporter of organic and non-organic cereals, today it finds itself having to deal with France, which has become one of the largest competitors on the European market.
